took out my rear seat cushion and found out that it was just way too loud without that insulation....didn't realize how much road noise that thing buffers.

Yeah that's what I'd be worried about too. Does anyone know if some really thick sound dampening material (Dynamat) would work nearly as well?

yeah but how much would using dynamat, and what ever else you would use cosmetically all weigh? would it defeat the purpose of taking the back seat out?

Raammat60 (similar to dynamat extreme) weighs ~25lbs per 62.5 sq feet. All together I believe the rear seats weigh ~47lbs. I doubt you will use 62.5 sq feet of material so the weight savings are still there.
