I'm gonna take a wait and see approach based on finished interiors. Have a guy in nj who does great work but havnt talked about pricing or leather though.

Finished interiors doesn't make a lot of sense unless you want better estimates on material needed. As I've said, someone could take this leather and do a terrible job recovering parts. It would be a huge shame to fault the leather for this.

Agreed however if guys here have good results in colors that suit I'd be willing to discuss purchase. Im really focused on available colors like dove grey or anthracite but so far...

I am very interested in cinnamon hides (enough to wrap front and rear seats)...But I'm not sure I'd get into the project immediately. Which lends the question, how well do the hides keep in the state we'd receive them? Would I just have to do leather treatments on it to keep it nice before installing?

I would not treat them. Box them rolled up in unbuffered tissue paper.
