We're going through an upheaval right now but the smaller, independent operators have much more flexibility and can change faster than chains. Personally, I feel the future of eating establishments is in the smaller places.

If you ask industry people that are not affiliated with the large chains, they paint a very different picture. Darden et al won't admit their food is terrible, often pointing to extensive market studies and then misreading the trends. Look at the other large corps losing market share; Coca Cola, Lays, McD's, Dominos (so much for the take-out argument) and Subway. The one thing they all have in common is terrible food loaded with salt and fat (or sugar) and devoid of significant nutritional value. People are starting to finally understand this which also explains the substantial rise in the popularity of farmer's markets and organic foods in general.

tl;dr They're just looking for excuses.

Might be a little off-topic but I think the "I want it right now" mentality is also taking a toll on the restaurants. Sure sometimes you might get the food right away at McD or even have to wait a few mins or something. All random wait times.

Go to a "sit-in non-fast food" restaurant. When the group/family is done ordering from the menu and then wait for it to come out...guess what?? - everyone is glued to their smartphones now lol. The generation of actually interacting face to face is no more, they would rather "text" even though they are right next to each other

For full service there's a sweet spot right around 80-120 capacity dining room, which is about 15-18 tables.

It's location dependent. The one here on dutchman's lane is incredibly talented. Best hooters of the couple dozen I've been to. Others are very hit and miss. Their wings are decent.
