What were your plans...were you just let them run continually? You could let the DME/ thermoswitch to trigger the relay that comes with the fan.

How would I wire the dme/thermoswitch to come on? Is there something I need to buy for that?

Because maybe too much cooling?

They only need to come on if coolant temp reaches its threshold temp.

Otherwise you might as well ditch your stat.

You would either use the factory aux fan switch to trigger your new fans or buy a controller. There is more adjustability with a controller. Some are better than others. You can even find PWM units. But beware controllers may be designed for a certain sender and you have to install it in coolant. Most factory senses are in the head but the block can also work so you would have to find one with the right thread size and pitch to fit a stock hole or be adapted to it. You might also be able to drill your T Stat housing for one.

Few go this far although I think it’s the best way. Most just run off the aux fan wiring, which is sufficient for one fan but maybe not two. Some use a lower temp switch from a 318i.
