I get what you're saying, but I don't think having a flashy interior to offset a quiet exterior (white, black, grey, silver) is a bad thing. Having both the exterior and interior grab your attention...

Run carfax checks to see how many are actually still on the road and see the mileage/ history of the cars. Then run periodic searches to see if the cars ever come up for sale.

I'd go for an E34 if for no other reason that it's rarer. The E39 is a great car, but it's more common than the E34. That's not to say you see E39 M5s on every corner, but I'll probably see 50 E39...
